Drop the experimental banner from the README and move to version 2.x.0 instead of 2.0.0-alpha.x

Requirements:

Get confirmation that current ecs-service-extensions users are able to migrate to v2
Get confirmation that Python, Java, and .NET users are able to use the module

Hi. Where are you planning to get this information from? I have migrated various services to v2 without problems.
