• Removes unused boilerplate from the example server plugin taken from KrakenD docs
• Restructures the project to have the plugin at root and example OpenAPI spec and KrakenD config in an example dir
• Fleshes out the README with docs on the config options + how to setup and curl the plugin with the example KrakenD config and appspec, how to setup with the Firetail SaaS and how to add it to an existing KrakenD setup
• Updates the plugin to use the latest version of the go lib which has request & response validation disabled by default, and does not require an OpenAPI spec
• Adds passthrough for the LogsApiToken, LogsApiUrl, DebugErrs, EnableResponseValidation, EnableRequestValidation options of the go lib
